Along the tedious and somewhat mundane drive up 35, one beacon shine brighten than most of the other roadside paraphernalia dotting the barren landscape: West, Texas. 

It's the heart of the Czech culture in Texas, and as strange as that sounds to non-Texans, its a pretty vital part of Texas' young heritage - and one of the great treats of having a proud ethnic group in  your midst is having access to their proud food.  The Polish have kielbasa, Germans cornered sausage, the Chinese take out, but the Czechs gave us those wonderful doughy treats called kolaches.

The kolache, the cousin to the danish, is a lovely treat that comes topped with fruit and cream cheese or filled with sausage.  The best, as I've always heard, comes from West.  I pulled into the Czech Stop (across the highway from the Czech Inn) and finally go to taste West's famous treat for the first time.  They topped the kolaches found at a gas station just outside Houston and have risen to the top of the charts on my kolachevision rankings by far.
